Rosemary Chicken Stew with Oat Dumplings

It was cold and rainy today so I decided to make a stew for the first time! It was great for me, but my husband doesn’t seem to be a stew person in Canada. I think he may be cranky since he quit smoking today. Anyway more for me! YUM!

Stew

  • 1 tbsp Butter
  • 1 Big potatoe
  • 4 Carrots
  • 2 Big chicken breasts (boneless skinless)
  • 1tsp rosemary, salt and pepper
  • 1 Tbsp Flour
  • Reduces Sodium Chicken Broth 1.5 Cups
  • 1 C frozen or canned baby peas

Dumplings

  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 C flour
  • 1/2 C Rolled oats
  • 1 tbsp butter
  • 1/3 C milk

STEW

Okay, in a big heavy pan, melt the butter. Then chop up the carrots and potatoes into small pieces, and cook them in the butter until the potatoes are soft. (Med/High heat)

Next, cube the chicken and add to the mixture, cooking until the chicken is fully cooked.  Add salt, pepper and rosemary, as you like.

Add the flour and mix it in well.

Add the broth, and stir until flour is dissolved and liquid starts to thicken.

Turn on low, and cover.

DUMPLINGS

In a small bowl, mix dry ingredients together. Add butter, and make it so the butter is crumbled into small pieces. 

Add milk and mix just until it’s made a soft dough.  Drop by TBSP onto the top of simmering stew.  Cook 15 more minutes.  Serve immediately.  Serves 4.
